It is unclear how the animal ended up on the highway.
The cow was lying dead along the side of Highway 14 when the CHP arrived at the scene about 9:45 a.m., according to CHP Officer John Lutz.
"We don't know whether it wandered onto the highway and was hit, or was dumped there," Lutz said. "This is actually quite common on rural areas."
The responding CHP officers, with the help of Caltrans crews, moved the carcass into the back of a truck and hauled it off, he said.
Lutz said animal sightings along Highway 14 are common especially along the northern reaches of the Santa Clarita Valley, where the road runs through rural areas.
Last year, a CHP officer chased an emu along Highway 14, Lutz said.
